It appears that I did not create wine out of thin air. Actually a scientific answer as to why my wine was entering into the air lock and almost over flowing is certainly less creepy. So it appears that thermal expansion of the wine is what occurred. We have had an absolutely wonderful April. The temperatures went from below average and average for March to above average and average for April. Although where I have the carboys does not experience large temperature swings on a daily basis, over a three-week period of time, the temperature in the room raised enough to cause the wine to expand in the five-gallon carboy.
